How To Make Greek Stifado - Beef Stew

my sister Ellie has perfected this Greek Stifado and has finally shared it with me. I even messed up the first time making it and it still tasted amazing. Those are my favorite kinds of recipes. Here it is written down to share with you. Be sure to tag me in your photo if you made it!


Ingredients:

2-3 lbs lean beef or lamb (highly recommend lamb)

2 lbs pearl onions

1-6 oz concentrated tomato paste

1 can diced tomatoes with garlic, basil, and oregano

4 tbsp butter

2 cloves garlic, minced

2 bay leaves

2 tbsp red wine vinegar

1 tbsp sugar

3-4 dashes of cinnamon

Chicken Stock

Salt and pepper to taste

Instructions:

Cut the meat into 1-inch cubes. Over medium/high heat, brown the meat in 4 tbsp of butter in your pot.

Over medium heat, add tomato paste, diced tomatoes, garlic, bay leaves, red wine vinegar, salt and pepper to the pot with browned meat. Add chicken broth to cover. Bring to a boil, then simmer for 2-3 hours.

Once, the stew has tenderized, add onions, sugar, cinnamon, and salt and pepper. Bring to a boil again, cover, and simmer for 20 minutes until onions are cooked. Serve with rustic bread and top with feta cheese.
