Healthy Meals To Eat In The New Year

It’s that time of year…

where I try and start the new year on a healthier foot. The holidays are over and boy did I enjoy them, but now it’s time to get back into my normal eating habits. Pie for breakfast just isn’t it cutting it anymore. Here are some healthy meals that are packed with flavor and are incredibly delicious, I promise.

 
 

Hunter Pence’s Favorite Kale Salad

The bacon makes it savory and easier to digest the kale. The dried cranberries add a special natural sweetness and the slivered almond add a warm nutty crunch. This salad is packed with flavor, leaves you feeling full, and pairs great with a grilled chicken or you can eat alone. This has easily turned into one of my favorite salads as well.

Baked Salmon With Spinach And Crispy Pancetta

Good friend and fellow baseball wife, Amy Cole, came over one day to teach me her and Gerrit’s go-to meal. It’s incredibly flavorful, really easy, and incredibly healthy. This will definitely be added into my meal rotation. It’s a must try!

Pineapple Green Smoothie

Packed with lots of veggies and of course, my favorite, pineapple, this is an easy and refreshing way to get your greens in. Do not let the greenery intimidate you because once it’s blended with the pineapple you won’t be able to taste the spinach. It’s great for an afternoon snack or for breakfast. Either way, it’ll help you meet your veggie goal. Win win!

Skirt Steak And Plantains

This recipe only takes five ingredients. Which means it’s a super easy and super clean recipe. Great for lunch or dinner. Incredibly tasty and has all the textures you could want when you’re starving. These would also pair well with the Kale Salad mentioned above.

Crispy Baked Lemon Chicken

This is always my go-to for cooking. It’s my mom’s crispy lemon chicken. It looks super impressive, but it’s the easiest thing on this list. The broiler does all the work. It’s so tasty, so crispy, and so incredibly satisfying. This chicken with the kale salad or my famous (self-proclaimed) roasted bell peppers makes for a delicious meal. Chef’s Kiss :*

I’m excited to start eating cleaner. Overall, I just feel better when I do. Don’t get me wrong, I love Shake Shack just as much as the next guy, but it’s all about balance.
